When Krystal and Neil Hipwell bought a 109-hectare block in the Snowy Mountains, it wasn’t for the existing farmhouse on the land.

They’d made the purchase sight unseen and the farmhouse seemed forgettable at the time.

And for the couple, forgettable wasn’t in their vocabulary.

Together, they’ve built scenic escapes in Byron and Gerringong, and in 2021, they were on the hunt for their next location.

Krystal is the founder of luxury getaway brand Bunker Escapes; Neil, an award-winning builder with his own firm Futureflip.

“We offer unique, large group accommodation experiences in beautiful settings,” Krystal explains. “When we discovered [the property], we immediately felt it had the perfect potential to expand our vision.”

Their original plan was clear: they’d build a new dwelling at the highest point on the land, to make the most of the views spanning Thredbo Valley and Lake Jindabyne.

But like all good stories, their best laid plans weren’t meant to be.

On their first visit to the property, the couple and their family couldn’t help but fall in love with the existing farmhouse.

“We saw what amazing bones it had. Although it was slightly dated, it was structurally very sound and had potential,” Krystal says.

“It was an easy call just to renovate it and put our own flair on it.”

They repainted the interior and exterior; microcemented the bathrooms and kitchens; and updated appliances, tapware, basins and vanities.

“Leaning into the country setting, we added blackbutt timber cladding to the exterior and joinery in the kitchen,” says Neil. “We restyled the entire property to enhance that country charm and lifestyle.”

The stunning haven that resulted – called Jimmy Doo – reflects the duo’s flair for elevated and cohesive interiors.

Now listed for sale, the five-bedroom, four-bathroom property’s impressive list of amenities includes a hot tub and sauna, a boutique fitness studio and an expansive deck kitted out with a barbecue and wood-fired pizza oven.

There are also three separate tiny homes on the land, which could be used for guest or rental accommodation.

In total, the property can host 22 guests across multiple dwellings.

Jimmy Doo is only a 25-minute drive from the Thredbo and Perisher ski fields and operates as a popular short-stay accommodation option.

The sale comes with completed and compliant architectural plans for an additional seven-bedroom structure at the highest point on the block — the dwelling the Hipwells originally planned to build.
